Eggy Bakes
Large parchment paper cups are a necessity here! Warm these up throughout the week and start your day off right!
Ingredients
- 12 free range eggs
- ½ cup onion
- 1 cup veggies of your choice, cut fine and small
- 12 tsp salsa
- 12 tbsp shredded cheese
- Salt and pepper
Method
- Preheat oven to 350 degrees Fahrenheit
- Line a muffin tin with large parchment muffin cups
- Break eggs and mix into a large bowl, adding just a splash of water as you whisk. Season with salt and pepper.
- Pour eggs evenly into muffin cups, filling about ¾ of the way up.
- Add vegetables, distributing evenly.
- Add one tsp of salsa per cup
- Top each cup with cheese
- Bake until firm, about 15 minutes
