Eggy Bakes

Large parchment paper cups are a necessity here! Warm these up throughout the week and start your day off right!

Ingredients

  • 12 free range eggs
  • ½ cup onion
  • 1 cup veggies of your choice, cut fine and small
  • 12 tsp salsa
  • 12 tbsp shredded cheese
  • Salt and pepper

Method

  • Preheat oven to 350 degrees Fahrenheit
  • Line a muffin tin with large parchment muffin cups
  • Break eggs and mix into a large bowl, adding just a splash of water as you whisk. Season with salt and pepper.
  • Pour eggs evenly into muffin cups, filling about ¾ of the way up.
  • Add vegetables, distributing evenly.
  • Add one tsp of salsa per cup
  • Top each cup with cheese
  • Bake until firm, about 15 minutes
